Pork, shiitake mushroom and broccolini stir-fry
Ingredients
- 500g lean pork stir-fry
- 1 tablespoon canola oil
- 1 teaspoon extra oil
- 2 cloves garlic, finely chopped
- 3 teaspoons finely chopped lemon grass
- 1 bunch asparagus, cut into pieces
- 1/2 bunch broccolini, cut into pieces
- 1 tablespoon water
- 100g fresh shiitake mushrooms, thinly sliced
- 1 1/2 tablespoons soy sauce (salt reduced)
- 1 tablespoon Hoisin sauce
- 1 teaspoon finely grated lemon rind
- 1 tablespoon fresh lemon juice
Preparation
- Heat half the oil in a large wok over a medium high heat. Add half the pork and stir-fry for 3 minutes, stirring continuously. Transfer to a plate, cover loosely with foil and set aside. Repeat with remaining oil and pork.
- Reduce heat to medium and add extra oil, garlic and lemon grass. Cook for 1 minute. Increase heat to high and add asparagus, broccolini and water and quickly stir-fry for 3–4 minutes. Return pork to wok with mushrooms, soy, Hoisin, lemon rind and juice. Stir to combine and cook for 2–3 minutes to heat pork through.
- Serve immediately with steamed rice.
